Vegan Masala Chai Ice Cream Recipe

Ingredients:

2 cups full-fat coconut milk (or oat milk for a lighter version)

1/2 cup cashews (soaked in warm water for 1 hour)

1/2 cup maple syrup or jaggery syrup

1 ½ tbsp Old Harbor Kadak Chai (or 2 strong brewed tea bags)

1/2 tsp Old Harbor Chai Masala

1 tsp vanilla extract

Pinch of salt
Instructions:

Brew the Chai Base
In a saucepan, heat 1/2 cup of the coconut milk and add the Old Harbor Kadak Chai leaves (or tea bags). Simmer gently for 4–5 minutes. Strain and cool. -
Blend to Perfection
In a blender, combine the strained chai-infused milk, soaked cashews, remaining coconut milk, maple syrup, chai masala, vanilla, and salt. Blend until silky smooth. -
Chill and Freeze
Pour the mixture into a container. Freeze for 6–8 hours, stirring every 2 hours for a creamier texture. For best results, churn in an ice cream maker if available. -
Serve with Style
Scoop into bowls and sprinkle a touch of chai masala or crushed roasted almonds. Serve with a cinnamon stick or a mini khari biscuit on the side for desi vibes!
