Lemon Tea Strawberry Loaf

Tea cakes are simple, fuss free and delicious and the classic pairing of strawberry and lemon can never go wrong. Lemon green tea helps in adding the perfect lemon taste and this one in particular is an all-time favourite.


  • 1 tea bag lemon green tea
  • 3 tbsp milk
  • 1 cup maida
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup vegetable oil
  • 1/2 cup castor sugar
  • 1/2 cup hung curd
  • 1/4 tsp lemon zest
  • 1/4 cup fresh strawberries, sliced
  • 1/4 cup fresh strawberries, chopped


  1. Bring the milk to a boil over low heat in a small pan and add in the lemon green tea bag. Turn off the flame and let it sit for 15 minutes.
  2. In a bowl, sift maida, baking powder and baking soda together.
  3. In another bowl, whisk the oil, hung curd and sugar until everything is well combined.
  4.  Add in the tea infused milk and lemon zest and mix.
  5.  Gently fold the flour mixture into the wet ingredients and mix. Make sure to not over-mix.
  6. Add in the chopped strawberries and stir well.
  7. Pour the batter into the mini loaf moulds. Make sure to fill only 2/3rds of the mould. Arrange the strawberry slices on top.
  8. Bake in a pre-heated oven at 180 C for around 40 minutes until a toothpick inserted into the center comes out clean.
